Mini Cadburry Snowball Cookies



2 sticks of butter (1 cup), softened, more on the chilled side

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1/2 cup unsweetened cocoa

1 Tbsp vanilla

1 teaspoon salt

1 teaspoon baking soda

2 1/4 cups all purpose flour (I use gluten free flour and its great too)

1 bag Mini Cadbury snowballs (milk or dark chocolate)



Preheat oven to 375 degrees.

Combine sugars and butter. Mix well.

Add eggs and cocoa, mix again.

Add salt, soda, vanilla and flour.

Then add your Mini Cadbury snowballs. You can crush them, or I prefer to fold them into the dough with the mixer!!

Line baking sheet with parchment paper, place golf ball size cookie dough balls on the sheet about an inch apart from each other.

Bake for 7-8 minutes. They are best if they are still a little bit soft. Let cool for 2min!!
