PEPPERMINT SUGAR COOKIES
Ingredients
COOKIES:
* 1/2 cup butter
* 1/2 cup melted coconut oil
* 1 cup plain greek yogurt
* 1 1/2 cups sugar
* 2 teaspoons vanilla
* 4 1/2 cups flour
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1 cup crushed candy cane
* sugar for top of cookies
FROSTING:
* 1/2 cup butter softened
* 2 tablespoons sour cream or plain Greek yogurt
* 4 cups powdered sugar
* 1 teaspoon vanilla
* dash of salt
* 1-2 drops red food coloring optional
* 2-3 tablespoons milk if needed
* sprinkles/crushed candy peppermint
Instructions:
-Preheat oven to 350
- Take butter out of fridge and microwave for about 15 sec.
- Mix butter, oil, and cold yogurt for 1 minute
- add sugar and vanilla, mix until smooth
- Add all dry ingredients at once, including the crushed peppermint.
- Mix just until flour disappears and mixture comes together in a ball of dough. Mix on low.
- Spray a 2in cookie scoop with a little cooking spray.
- Scoop the dough onto a baking sheet with parchment paper or silicon mat. If you dont have a scoop, roll into 2in balls.
- Place about 1/4 cup of sugar into a bowl, spray the bottom of a flat cup with cooking spray. Flat one cookie a bit, and then dip the cup into the sugar.
- Press the bottom of your glass cup against the cookie. twisting the cup as you press, to make a jagged edge.
- I bake 8-10 cookies at a time on a sheet. Bake for 10-12min. until edges are lightly golden. Remove from the oven and let cool for 2min. then slightly loosen cookies from the pan or they will stick even to a lined pan. and then continue to cool.
- Make Frosting! Combine all ingredients in a mixer until combined. add a little milk if you need it thinner. Frost cookies after they are cooled. Sprinkle with crushed peppermint on top. Best if kept chilled in the fridge!
