These are a weekly staple snack in our house! I make a batch of them once a week and they are perfect for us to throw into lunch boxes, pack for the beach or a yummy afternoon snack!
Ingredients:
1/3 cup melted coconut oil
1/3 cup creamy peanut butter
1/2 cup honey
1/2 cup sourdough discard
1 tsp vanilla extract
4 cups old fashioned oats
1 TB of flaxseed
1 TB of chia seeds
1/2 tsp sea salt
1/2-1 cup semisweet or dark chocolate chips
Directions:
1.Preheat oven to 325 degrees F.
2. In a big mixing bowl combine peanut butter and coconut oil. Add honey, vanilla and discard and mix until creamy.
3. Add in oats, flaxseed, chai seeds, and salt. Mix well, and add in chocolate chips.
4. Line a 9x13 baking pan with parchment paper. Add the mixture into the pan and start flatting It out evenly across the pan. Then place another piece of parchment paper on top and press hard onto the mixture. This is key to make the bars stick together during baking. Make sure to go over it a few times.
5. Peal the top layer of paper off, and place the pan in the oven and bake for 20-25min.
6. let fully cool and then cover and store in the fridge for at least 2 hours or overnight. Then cut into bar size you desire. For best storage, wrap each bar individually in plastic wrap or wax paper and keep stored in the fridge!
